Savory Pastry - Poğaça

Savory Pastry (Poğaça)





These delicious savory pastries called 'poğaça' are a very common for breakfast or tea time treat in Turkey. 


They are easy to make at home; make your kitchen smell heavenly and they are very popular with children, as well as adults. 




There are many options for the filling;  with cheese, potatoes, minced meat, etc.... 





Ingredients:
For the dough:
125 gr. butter /margarin 
1/2 cup oil
1/2 cup yoghurt
1 egg yolk (egg white for the top of poğaças)
1 pack baking powder (10 gr.)
1 teaspoon salt
3- 3,5 cups flour (as much flour as necessary)

For filling:
2-3 potatoes (boiled and grated)
1/2 bunch dill (chopped)
1/2 cup kashar cheese (shredded)

For topping:
1 egg white
sesame seeds

Instructions:
1- First, let's prepare filling. Put grated, boiled potatoes, shredded kashar cheese and chopped dill in a bowl and mix well.
2- In another large bowl put yoghurt, oil, butter, egg yolk and mix them well. 
Then add flour, baking powder and salt to the mixture gradually and knead well with your hands for a few minutes until the dough comes together. 

3- Preheat the oven to 180C and grease a baking tray or place a parchment paper in a tray.  
4- Divide the dough into small pieces, each about a size of small tangerine. Roll each piece into a ball, and then flatten in your hand with your fingertips or flatten on the counter. 
Put a spoonful of filling mixture on it (take care not to overfill),leaving a little unfilled dough margin near the edges.



Close it up folding the edges upwards like a bundle. Roll the stuffed dough into a ball in your palm.





Place the stuffed dough on the greased tray and repeat this procedure with the rest of the dough pieces. The folded side of pogacas should be at the bottom.
Then brush the stuffed doughs (pogacas) with the egg white. Sprinkle sesame seeds.




 5- Bake in the preheated oven at 180C for about 30-40 minutes, until they are golden brown at top.
