Leek Quiche
The best leek dish....
When I first tried this recipe, ours are no longer eating any other leek dish and I recommend you to make this recipe persistently. I am sure it will be your favourite just like my favourite.
Leek and carrot are compatible vegetables for making a delicate food. You may flavour your pie adding other vegetables, cheese, kashar, heavy cream and spices...
They make it more flavoured with crispy pastry.
It may be a lunch, a dinner, or a snack food but I'm sure you'll like and try it time after time....

Ingredients:
For dough:
150 gr. butter (cold and cubed)
2 + 1/4 cups flour
1 egg
1/4 cup cold water
1 teaspoon salt
For filling:
1/2 kg leeks (finely chopped)
2 carrots (grated)
1 green pepper (chopped)
1 red pepper (chopped)
1 cup grated cheese
1 egg
1 cup heavy cream
3 -4 tablespoons olive oil
salt, blackpepper
Instructions:
1- Mix the butter and flour in a big bowl until crumbled like a sand.
2- Add in salt, egg, water and mix them.
Knead the dough until combined well
3- cover the dough with stretch film and put in the fridge for 30 minutes.
4- Flat the dough to the size of pie pan by using rolling pin.
Spread the flattened dough over the greased pan and make a small wall on the edges of pan.
Make small holes on the dough with a fork or toothpick for preventing dough rising.
Replace the pan in preheated oven (180 degrees) for 15 minutes until half baked.
5- Sote the finely chopped leeks with olive oil in a big pan, then add chopped peppers, grated carrots salt and black pepper. Sote them in a few minutes.
Set aside to cool.
Add in grated cheese to the cold soted mixture, mix them with a spoon.
7- Spread the soted vegetable mixture onto the half baked quiche.
8- Mix egg and heavy cream in a bowl, then pour this mixture onto the quiche with soted vegetables.
9- Put it in the oven and bake it until golden brown.
10- Cut the quiche into the squares and serve it.
