Stuffed Cabbage Rolls (with ground meat)


This traditional Turkish dish is very delicious and favourite one in our country. In winter it is cooked at almost every house.


Don't imagine stuffed rolling cabbage is a difficult for you. 
It is really, really, really ambrosia for all your trouble.


There are different versions of this dish and all versions are very very delicious. 
Today I'm writing the recipe of the one with ground meat, is my favourite one.


Stuffed Cabbage Rolls (with ground meat)

Ingredients:
1 medium white cabbage
300 gr. ground meat
1/2 cup rice - rinsed and drained
1 onion - finely chopped
1,5 tablespoon tomato paste
1 teaspoon black pepper
2 teaspoons salt
4-5 tablespoons olive oil 
1 tablespoon tomato paste (for over the rolls)

Instructions:
1- Wash the cabbage and seperate all its leaves.

2- Put the leaves into the salted boiling water in a pot. Boil them until they get tender but not over cooked (for about 4-5 minutes). Take out them from water.

3- Cut the leaves in regular shapes (size of your hand). Cut the thick streaks of the leaves out.

4- For the filling: put the ground meat, onion, rice, tomato paste, olive oil, salt and pepper in a bowl. 
Mix them until they combined well.

5- Take one of the cabbage leaves on a flat surface. Put some filling on the leaf. Fold the edges over the filling and roll it up.





6- Repeat with the remaining leaves and filling.                                                                               

7- Place these cabbage rolls in a pot side by side.


8- Pour water over the cabbage rolls half way up the top layer. (You may add extra water if necessary)

9-Put 1 tablespoon tomato paste and some water in a small bowl.
Dilute it by stirring with a spoon. Pour it over the rolls.

10- Put cabbage leaves over the rolls and a heavy plate to stop them from unraveling.



11- Cook over low heat for about 40-50 minutes, until the rolls are tender.

12- Serve hot with yoghurt by the side and lemon wedges to squeeze over.
