Islim Kebabi 

I'm sure this elegant traditional Turkish dish will be your favourite.  



Wrapping meatballs in lightly fried eggplant slices may take a little time to prepare but it's absolutely worth it and very tasty. 



It has many variations. Sometimes it's cooked with chunks of lamb or chicken, but my favorite is it's with meatball. It's served with pilaf by the side.   




Ingredients:

4 eggplants (long size)
2 tomatoes (sliced)
2 green peppers (cut)
some oil for frying

For meatball:
400 gr.  mincemeat
1 onion (grated)
1 clove of garlic (grated)
4 tablespoons bread crumbs
1 teaspoon salt
1 teaspoon blackpepper
1 teaspoon cumin

For sauce:
1 cup water 
1 tablespoon tomatopaste

Instructions:

1- Peel eggplants lengthways in stripes.
2- Slice the eggplants lengthways, about 1 cm wide.
3- Sprinkle some salt on both sides of eggplant slices and leave for about 5-10 minutes.
4- Pat dry the eggplant slices with paper towel and fry lightly on both sides.
5- Drain the fried eggplants on the paper towel to absorb the excess oil. And let them cool off.
6- Start doing the meatballs while waiting. Transfer mincemeat in to a large bowl, and add grated onion, grated garlic and bread crumbs. Season with salt, blackpepper and cumin. 
7- Mix all them well with your hands.
8- Form the meat mixture into balls and flatten lightly. 
9- Fry the meatballs lightly.
10- Drain the fried meatballs on the paper towel to absorb the excess oil.
11- Take two slices of eggplants and make a cross shape.
Place a meatball in the middle of the cross. Fold over the slices to wrap the meatball.
Lay a slice of tomato and green pepper on top. And insert a toothpick to bond your kebap.






12- Continue with the remaining meatballs and eggplants in a similar way.
13- Place all the packages in the oven proof dish. 
14- Dissolve tomato paste in the 1 cup of hot water and pour around all the eggplants packages.



15- Bake in the oven for about 30 minutes.
16- Serve on a dinner plate with tomato sauce.
